Note: Correct measure of baking soda is the key for getting nice pink color of tea. Slightly more baking soda will turn tea dark and less soda will not turn tea pink. |

Well written---, deserves appreciation. Sheer Chai is the Kashmiri delicacy after lunch.KP's call it Sheer Chai,while it is also known as Noon Chai. Some also drink Noon Tyoth--that is the same tea without milk. It is considered to be digestive drink. It has been observed that Kashmiris enjoy Sheer Chai, in Diaspora as well. Sheer Chai must be taken with Teil wor'e--puffed bread with sesame.

Sheer Chai is one of the delicacy of Kashir. I remember no Ashtami Bata was complete without sheer chai. I always wondered how the colour gets pink or lighter. The secret is in Phul. Thanks for updating our GK. Happy recepying

Mrs Ganju, thanks for putting sheer chai recipe on-line. I love this tea. My mom used to make it only when any eldely kashmiri lady would come to our home and then I used to tell her can I also get little. She used to get happy and would feel proud that I also like sheer chai as opposed to my father who does not like sheer chai.

It seems kashmiri men don’t like sheer chai as much as kashmiri ladies like it. I wonder why? I did not know how to make it, now I will make it and share with my non kashmiri wife.

I make my pink from green tea leaves but boiling time for these is quite short and there is no need to add baking soda either. After boiling the leaves for five minutes, aeration with cooking spoon for a minute or so turns the brew to burgundy colour. When about a tablespoon of milk is add, it gives a tea with a lovely deep and bright pink colour.
